Directions
Preheat your oven to 350. On a sheet tray, add the broccolini florets. Toss with olive oil, season with salt and pepper and roast for 8-10 minutes, until you have a soft char on them.
In a hot cast iron skillet, on medium heat, add the olive oil and beef. Season with salt and pepper to your liking and cook the beef until fully cooked through, breaking it up throughout the cooking process. Remove to a plate and set aside. Keep about 2 tablespoons of the fat in the pan and remove the rest.
Keep the pan on medium heat and add the potatoes. Season with the green onion powder and garlic scape powder. Leave undisturbed for about 6-8 minutes to allow them to slowly create a nice golden-brown sear on the outside. Add the carrots and the pepper and gently mix to start breaking down the vegetables. Season with salt and pepper to taste.
Add the broth and cover. Cook until all the broth is absorbed.
To serve, add the beef back to the pan and gently mix. Top with the broccolini and serve family style.
