How do I know this is low in FODMAPs?
Our proprietary recipe has been tested by Monash University, the creators of the FODMAP diet and most trusted source for testing FODMAP levels in foods. One serving size of our organic beef bone broth has been shown to be low in FODMAPs.
The Monash University Low FODMAP Certified trademark is used under license. A low FODMAP diet does not treat a disease but may help to meet nutritional needs with reduced gastrointestinal symptoms. We always recommend seeking counsel from a healthcare professional before following a strict low FODMAP diet.
Why is the low FODMAP certification seal not on the package?
Unlike most food products which are governed by the FDA, American beef products are governed by the USDA. The USDA's process requires packaging approval before launch. Because we are the first "Low FODMAP" beef product, under current regulations, we are unable to list this on the package. Rest assured, this product has been rigorously tested and certified low FODMAP by Monash University. You can download our certification proof here.
Is this gluten free?
Yes, this and all of our products are gluten free. The FDA sets a limit of less than 20 ppm (parts per million) for the unavoidable presence of gluten in foods that carry this label. An independent lab test each of our finished production lots (we've always come back at less than 5 ppm – testing methods can't detect lower). Please reach out to see our lab reports any time.
How is the broth made?
We start by sourcing organic grass-fed beef bones and vegetables from local farms. To ensure only the safe, green parts of our leeks and scallions are making it into the broth, we trim all the vegetables by hand.
We combine all the bones, vegetables, and water, and gently simmer them together for over 16 hours. We then remove all the fat and other impurities to produce one of the clearest and cleanest broths you’ll find.
To retain flavor, the broth is bottled in cartons under sterile conditions. This produces an aromatic, shelf-stable broth that will last for at least 24 months without refrigeration. From start to finish, production of our beef broth is done entirely in the United States.
What are the ingredients?
Our beef bone broth is made from water, certified organic beef bones, and organic vegetables from local farms. We use the green tops of scallions, the green parts of leeks, oyster mushrooms, tomato paste, carrots, parsley, thyme plus a tiny amount of celery and nori.
You won’t find any additives, fillers, stabilizers, preservatives, or yeast in our beef broth. Our recipe does not include salt or pepper either, giving you the option to season it to your liking, depending on whether you are pouring it straight into a bowl or using it with a favorite recipe.
Are there any preservatives?
Absolutely not. You won’t find any additives, fillers, stabilizers, preservatives, yeast, or ingredients you can’t pronounce in our broth. Our recipe does not include salt or pepper either, giving you the option to season it to your liking, depending on whether you are using it straight from the pouch or in a favorite recipe.
Why is there no salt added?
We make our broth free of salt so that you have the option of seasoning it to taste.
When broths containing salt are reduced during cooking sauces, soups, risottos, and stews, they can easily make the final result far too salty. Since we leave the salt out of our bone broth, you can season your signature recipes with exactly the amount you need. The trace amount of sodium you see on our nutrition label is from the natural salts found in bones and vegetables.
Why is there no vinegar added?
Some bone broths call for vinegar, citing claims that it lowers the pH level to extract more nutrients from the bones as they cook. However, our testing shows that small amounts of vinegar do not make a substantial difference in the pH, but do impart a sour taste that we and our test panels don’t enjoy.
Isn't celery high in FODMAPs?
In higher quantities, yes. But in low quantities, celery is "safe" per Monash lab testing. It represents a very small percentage in our recipe and the added flavor is worth it (we don't believe in eliminating flavorful vegetables more than is scientifically necessary). And of course, our final product has been tested and confirmed to be low FODMAP, so no worries!
Do I have to keep the cartons in the fridge?
Unopened, nope! You can store the carton in your pantry or cupboard for up to 24 months (be sure to refer to the expiration date for best results and maximal flavor). However, once you open the broth, you must store it in the fridge and use it within 3-5 days.
How long will it last?
Our organic broth is filled into cartons using one of the most prevalent types of thermal sterilization systems in the world. This process sterilizes the product, locking in all the aroma, color, and flavor and producing a shelf-stable broth that will last for at least 24 months without refrigeration.
However, once the seal is opened, you must store it in the refrigerator and enjoy it within 3-5 days.
Is your packaging environmentally friendly?
Our broth is packaged in lightweight cartons. We’ve chosen this format because the delicate flavors of our broth are best maintained in this format with the added benefit of having a smaller environmental footprint than glass jars – using less energy and generating fewer greenhouse gases to produce and ship. Is this suitable for dogs or pets?
We have heard that dogs can't eat onions. While this product contains no onion bulbs, it does contain scallion tops, leek tops and chives which – while low FODMAP and gentle for humans – may not be safe for dogs or other pets. Please discuss with your vet.
