Simple Low FODMAP Gourmet Risotto

Homemade food doesn’t get much better than creamy and decadent low FODMAP risotto. This simple rice dish sounds complicated, but it is surprisingly easy to make. In this dish we use a fun combination of Italian cheeses: Grana Padano, Fontina and Taleggio. These are all aged cheeses containing very little lactose, which makes them perfect for the low FODMAP diet.
