Ingredients
butter, 3 tablespoons
rice flour, 3 tablespoons

gourmend organic chicken broth, 2 cups
dry white wine, โ cup
fresh chives, 2 teaspoons, finely chopped
fresh thyme, 1 teaspoon, leaves only
salt and pepper, to taste
Directions
Once your turkey or chicken is done cooking, remove it from the roasting pan and set aside to rest. Into a separate bowl (or fat separator, if you have one), pour off any fat left in the pan but do not wash the pan. After the fat rises to the top of the bowl, spoon out and dispose of the fat, leaving any liquid drippings behind for later. If you have a fat separator, this will be very easy โ just pour off and reserve the liquid and discard the fat.
Place the roasting pan over medium heat (using 1 or 2 burners, depending on your panโs size) and add the butter, allowing it to melt and bubble. Add the rice flour and whisk with the flour to combine, scraping up and incorporating any stuck browned bits. Cook and whisk this mixture continuously and vigorously until it has slightly browned and become smooth, about 5 minutes.
Add the white wine to the pan, continuing to whisk constantly, allowing it to boil for a minute or two. Now add the broth plus any drippings you reserved from earlier and bring to a simmer, while continuing to whisk for an additional 5-7 minutes.
Stir in the herbs and whisk to combine. Season with salt and pepper to taste. Serve in a gravy bowl and enjoy with your roast!
