A light, zesty, refreshing and super simple vinaigrette for your salad of choice.
Low FODMAP French Vinaigrette
dijon mustard, 1 teaspoon
salt and pepper, to taste
white wine vinegar, 1 tablespoon
sunflower, safflower, canola or similar neutral oil, 3 tablespoons
Combine the mustard, salt, pepper and vinegar in a bowl, whisking together as you add the vinegar.
Drizzle in the oil slowly while continuing to whisk until nicely combined and thickened.
Serve atop your favorite low FODMAP salad (think lettuce, radishes, carrots, cucumbers, a small amount of chickpeas or lentils, and the like)!
